sautee onion + celery+ then add chilli powder
cook for 3-4 min. add Diced tomatoes + chicken broth.
Shred the chicken. Add it to the soup.
other delicious ingredients to add:
black beans
cilantro
corn
sliced avocado (on top - when serving)
crunched up chips (good but not the same "healthy" soup )
cheese (good but not the same "healthy" soup)
sour cream (good but not the same "healthy" soup)

I am totally making this tonight for dinner! It is cold and rainy today so it will really hit the spot. And God Bless the grocery store chickens - we have them at least once a week.
okay.....if you are going to make this there are a few things i left out: make sure that the onions and celery cook until the onions are almost clear. Then add in the chili powder and sautee for another 3 minutes or so.
Once you add the broth, tomatoes chicken, lime juice,and whatever else you want....bring the whole mixture to a rolling boil then turn it down. The longer it cooks the better it tastes!!
